Cheesy Bacon Baked Potatoes

Ingredients

1 Cheesy Bacon Dip Mix
4 Medium russet potatoes
1 cup Sour cream
1 cup Mayo
Optional garnish cheese, bacon and green onions

Directions

  1. Prepare the potatoes: Preheat your oven to 400°F (200°C). Scrub the potatoes clean and pat them dry.
  2. Make the cuts: Place the potatoes on a cutting board and make shallow cuts into the potatoes, about 1/4 inch apart. Be careful not to cut all the way through.
  3. Roast the potatoes: Drizzle the potatoes with olive oil and season with salt and pepper. Place them on a baking sheet and roast for 30-40 minutes, or until tender.
  4. Prepare Dip: Combine Dip Mix, mayo, and sour cream in a small bowl and mix until incorporated.
  5. Assemble: Once the potatoes are done, stuff the cuts with the Cheesy Bacon Dip. Sprinkle with cheddar cheese, bacon, and parsley.
