Creamy Herb & White Bean Soup
Ingredients
1 | Baked Potato Soup Mix |
1 can | white beans, drained |
6 cups | water |
1/2 | lemon, juiced |
1/4 cup | chopped soft herbs such as dill, chive, and/or parsley |
Directions
- Prepare soup with water as directed on packaging, adding a can of drained white beans halfway through cooking time.
- Once done simmering, stir in lemon.
- Add herbs to the top of each serving.
Optional: further garnish with crushed red pepper and a drizzle of extra virgin olive oil.
