Twice as Nice Potatoes
Ingredients
1 | Cheesy Bacon Dip Mix |
4 | large baking potatoes |
2 cups | sour cream |
2 cups | shredded cheese |
Directions
Preheat oven to 425 degrees. Bake potatoes until done (approximately 1 hour). Combine Cheesy Bacon Dip Mix and sour cream in a small bowl. Mix well. When potatoes are baked, cut them in half length-wise. Scoop out the inside of the potatoes and place in a medium mixing bowl. Add Cheesy Bacon Dip mixture to taste (approximately 1/4 cup per potato). Use blender or mash by hand until combined. Refill potato shells and top with shredded cheese. Bake until cheese begins to brown.
Serve hot! Makes 8 servings.
