Upside Down Chicken Pot Pie
Ingredients
1 | Baked Potato Soup Mix |
6 cups | water |
16 oz | frozen vegetables |
14 oz | can of diced potatoes |
3 cups | cooked chicken, cubed |
4 | round bread loaves |
Directions
- Combine soup mix with water; bring to a boil and reduce to a simmer. Add potatoes, vegetables, and chicken. Simmer for 15 minutes stirring frequently.
- Meanwhile, prepare bread bowls. Cut off the top half of the bread bowl using a serrated knife. Hollow out the inside of the loaf, leaving about 1 inch on each side. Optional: brush with oil and toast in the oven until golden.
- Fill each bread bowl with soup and enjoy!
